Abstract

Purpose

This study aims to analyze the impact of fractional derivatives on heat transfer and entropy generation during transient free convection inside various complex porous enclosures, such as triangle, L-shape and square-containing wavy surfaces. These porous enclosures are saturated with Cu-water nanofluid and subjected to the influence of a uniform magnetic field.

Design/methodology/approach

In the present study, Darcy’s model is used for the momentum transport equation in the porous matrix. Additionally, the Caputo time fractional derivative is introduced in the energy equation to assess the heat transfer phenomenon. Furthermore, the total entropy generation has been computed by combining the entropy generation due to fluid friction (Sff), heat transfer (Sht) and magnetic field (Smf). The complete mathematical model is further simulated using the penalty finite element method, and the Caputo time derivative term is approximated using the L1 scheme. The study is conducted for various ranges of the Rayleigh number (102Ra104), Hartmann number (0Ha20) and fractional order parameter (0<α<1) with respect to time.

Findings

It has been observed that the fractional order parameter α governs the characteristics of entropy generation and heat transfer within the selected range of parameters. The Bejan number associated with heat transfer (Beht), fluid friction (Beff) and magnetic field (Bemf) further demonstrate the dominance of flow irreversibilities. It becomes evident that the initial evolution state of streamlines, isotherms and local entropy varies according to the choice of α. Additionally, increasing Ra values from 102 to 104 shows that the heat transfer rate increases by 123.8% for a square wavy enclosure, 7.4% for a triangle enclosure and 69.6% for an L-shape enclosure. Moreover, an increase in the value of Ha leads to a reduction in heat transfer rates and entropy generation. In this case, Bemf1 shows the dominance of the magnetic field irreversibility in the total entropy generation.

Practical implications

Recently, fractional-order models have been widely used to express numerous physical phenomena, such as anomalous diffusion and dispersion in complex viscoelastic porous media. These models offer a more accurate representation of physical reality that classical models fail to capture; this is why they find a broad range of applications in science and engineering.

Originality/value

The fractional derivative model is used to illustrate the flow pattern, heat transfer and entropy-generating characteristics under the influence of a magnetic field. Furthermore, to the best of the author’s knowledge, a fractional-derivative-based mathematical model for the entropy generation phenomenon in complex porous enclosures has not been previously developed or studied.

Abstract

Purpose

Thermo-magnetic convective flow analysis under the impact of thermal radiation for heat and entropy generation phenomena is an active research field for understanding the efficiency of thermodynamic systems in various engineering sectors. This study aims to examine the characteristics of convective heat transport and entropy generation within an inverted T-shaped porous enclosure saturated with a hybrid nanofluid under the influence of thermal radiation and magnetic field.

Design/methodology/approach

The mathematical model incorporates the Darcy-Forchheimer-Brinkmann model and considers thermal radiation in the energy balance equation. The complete mathematical model has been numerically simulated through the penalty finite element approach at varying values of flow parameters, such as Rayleigh number (Ra), Hartmann number (Ha), Darcy number (Da), radiation parameter (Rd) and porosity value (e). Furthermore, the graphical results for energy variation have been monitored through the energy-flux vector, whereas the entropy generation along with its individual components, namely, entropy generation due to heat transfer, fluid friction and magnetic field, are also presented. Furthermore, the results of the Bejan number for each component are also discussed in detail. Additionally, the concept of ecological coefficient of performance (ECOP) has also been included to analyse the thermal efficiency of the model.

Findings

The graphical analysis of results indicates that higher values of Ra, Da, e and Rd enhance the convective heat transport and entropy generation phenomena more rapidly. However, increasing Ha values have a detrimental effect due to the increasing impact of magnetic forces. Furthermore, the ECOP result suggests that the rising value of Da, e and Rd at smaller Ra show a maximum thermal efficiency of the mathematical model, which further declines as the Ra increases. Conversely, the thermal efficiency of the model improves with increasing Ha value, showing an opposite trend in ECOP.

Practical implications

Such complex porous enclosures have practical applications in engineering and science, including areas like solar power collectors, heat exchangers and electronic equipment. Furthermore, the present study of entropy generation would play a vital role in optimizing system performance, improving energy efficiency and promoting sustainable engineering practices during the natural convection process.

Originality/value

To the best of the authors’ knowledge, this study is the first ever attempted detailed investigation of heat transfer and entropy generation phenomena flow parameter ranges in an inverted T-shaped porous enclosure under a uniform magnetic field and thermal radiation.

Abstract

Purpose

Soybean is potentially a rich source of protein and lipids along with isoflavone. However, the use of soybean is limited due to presence of anti-nutritional factors such as trypsin inhibitor, phytic acid, etc. The present study aimed at evaluation of Harit soya seeds of different treatments such as soaking, dehulling, germination, soaking+roasting and roasting in order to enhance its quality.

Design/methodology/approach

Harit soya seeds were utilized were soaked overnight and subjected for dehulling, germination for 3 days as well as roasting followed by drying to obtain fine powder for quality evaluation.

Findings

Dehulling and germination produce significant (p < 0.01) increase in protein, crude fiber, total chlorophyll, ascorbic acid, total phenolics, flavonoids and isoflavones while fat was decreased non-significantly. The highest value of 12.4 mg/100g, 5.3 mgGAE/g and 6.6 mg/g for ascorbic acid, total phenolics and isoflavones was found in germinated seeds. Also, the effect of soaking, roasting and their combination lead to significant decrease in the functional properties of the seeds. Anti-nutritional factors were significantly (p < 0.01) reduced in all forms of treated seeds while pepsin and trysin digestibility was enhanced during soaking, dehulling and germination with maximum value of 72.6 and 25.8%, respectively in germinated seeds.

Abstract

Purpose

The aim of the paper is to measure the service quality, satisfaction, service value and behavioral intentions of Gen Z in leading global Quick Service Restaurants (QSRs) in India by integrating QUICKSERV into an established model of consumer behavior.

Design/methodology/approach

A cross-sectional study design was used for the hypothesis testing. Service quality perceptions with satisfaction, service value and behavioral intentions were measured using structural equation modeling.

Findings

The outcomes suggest a direct effect of the service quality of QSRs on the satisfaction, service value and behavioral intentions of Gen Z customers. Satisfaction further influenced customers' behavioral intentions. However, customer satisfaction and behavioral intentions were not directly influenced by service value. Finally, the association between service quality and behavioral intentions was mediated by satisfaction.

Practical implications

Managers should encourage a pleasant attitude, good grooming and friendliness in QSR employees as Gen Z highly values these aspects. At the same time, QSRs should focus to elevate the service value of Gen Z customers by lowering their sacrifice perceptions and fostering initiatives.

Originality/value

Although many studies have considered millennials along with Gen Z to analyze the relationship between service quality and behavioral intentions in different service settings, few researchers have considered the impact of Gen Z consumer features in service quality research separately. The findings of the study will help both practitioners of different QSR brands and facilitators in hospitality academia to better understand the nuances and uniqueness of Gen Z consumer behavior in the QSRs.

Abstract

Purpose

The purpose of this paper is to highlight the biological activities of low-calorie natural sweetener, i.e. monk fruit (Siraitia grosvenorii), which are associated with its bioactive constituents.

Design/methodology/approach

Recent investigations focused on biochemical characterization and nutraceutical potential of monk fruit (traditional Chinese perennial vine) have been critically reviewed. Also, the safety and influence of monk fruit on organoleptic characteristics of prepared food products have been documented.

Findings

Biochemistry of monk fruit revealed that mogrosides are the principal compounds responsible for the high-intensity sweetness in the monk fruit. The fruit induces several biological activities including anti-oxidative effect, hypoglycemic response, anti-allergic properties, anti-carcinogenic and anti-tissue damage activities. Attributing to great potential as a bio-functional sweetener in food products, monk fruit extract has been approved as Generally Regarded as Safe.

Originality/value

This paper highlights the biological potential of monk fruit opening the doors to future investigations for its utilization in products of commercial importance including food and pharmaceutical preparations.

Abstract

Purpose

The coronavirus pandemic (COVID-19) and the associated economic lockdown provided a jolt to businesses around the world and the global economy. Amid the ongoing uncertainty, circumstances varied across business sectors and regions, but the common goal for business organizations was to respond effectively, devising strategies to survive the turmoil and accelerate recovery. The narrative in India was no different from the rest of the world. Due to the novelty of the event, literature regarding its impact on the strategic management of firms was scarce. Thus, this paper aims to attempt to ascertain the crisis impact on firms and subsequently unravel the tactical short-term and long-term strategic responses initiated by Indian firms.

Design/methodology/approach

The authors carried out an empirical investigation to comprehend the strategic foresight adopted by Indian firms. Following a structured literature review, the authors conducted semi-structured open-ended interviews with 28 business experts who were involved in drafting strategic responses for their respective firms. Subsequently, the authors performed a thematic content analysis of the expert interview responses to document firm-level strategic responses to the COVID-19 crisis and associated economic lockdown. The authors further searched reputed media articles to supplement and triangulate the primary research findings with management perspectives.

Findings

The authors identified that managers had adopted a dual approach responding to the disruption. Companies simultaneously focused on surviving the crisis in the short-term by reconfiguring existing resources and initiated long-term recovery by mobilizing efforts for a redesigned business model. The research findings indicated that companies had adapted to the dynamic chaotic crisis environment to fulfill the changed consumer expectations. Remote working was widely implemented, supply networks were adjusted, operations were managed with minimal resources, working capital was closely monitored and the product-portfolio was revamped to reap benefits in an essentials-only world. The impact of several strategic firm responses was determined through this study on the revenue, profitability, operational costs and regulatory adherence of the companies along with the ability to meet stakeholder expectations. The study suggested that companies encouraged innovative solutions and highlighted the importance of collaborative inter-organizational practices.

Research limitations/implications

The study contributed to an inter-theoretical perspective on firm strategic initiatives to confront a global crisis. Resource-based view, dynamic capabilities perspective and industrial-organizational theory-based perspectives, were applied. This facilitated an extensive analysis of the entire business ecosystem to identify various paths to accelerated recovery during and post COVID-19 world.

Practical implications

The research findings would aid managers in drafting a comprehensive response strategy during and post COVID-19 world. This study results would help managers in addressing multiple concerns such as the sustainability of operations in the short-term through working capital management, the fulfillment of changing consumer needs through sustained innovation and business model alterations to ensure long term growth. The study enabled managers to prioritize necessary actions, ascertain the impact of strategic initiatives and build sustainable competitive advantage for long-term growth.

Originality/value

The novel coronavirus pandemic and the associated economic lockdown impacted firm strategies and this was one of the very first empirical studies regarding how firm-level short-term tactics and long-term strategies were getting reshaped. Traditionally, companies were prepared to handle localized disruptions but a crisis of such epic global proportions jeopardized most business. This study provided an extensive review of the short-term tactical and long-term strategic response perspectives adopted by Indian firms to absorb the impact of this unique crisis and expected recovery with renewed strength. This was one of the first research articles to provide an inter-theoretical perspective on the ongoing global pandemic. This integrated view of the possible impacts of firm-level strategic initiatives provided a detailed knowledge repository to design the crisis response capability of firms.
